Highlights of the week. On this final leg of the study, we first stop at Mui Ne, one of the best known fishing villages in central Vietnam. This area is best known for Nuoc mam, Vietnamese fish sauce, the must-have ingredient in the Vietnamese diet. From there we travel to Saigon (renamed as Ho Chi Minh City, the capital of South Vietnam from 1954-1975). Here we not only visit several museums such as the War Remnants Museum, the Museum of Ho Chi Minh City, the History Museum, and the Reunification Palace, but also we take a walking-tour to see the French colonial architecture which is so prominent here. Using Saigon as their base, we take a day trip to visit the Cu Chi Tunnels, the legendary site of the Vietnam War. Lastly, we take a three-day excursion to the Mekong Delta to study the most diverse and vibrant cultures in the south.
