{"id":111923,"date":"2017-12-14T14:43:26","date_gmt":"2017-12-14T19:43:26","guid":{"rendered":"https:\/\/www.bates.edu\/news\/?p=111923"},"modified":"2018-07-27T14:49:48","modified_gmt":"2018-07-27T18:49:48","slug":"students-in-biology-class-visit-lewiston-brewery","status":"publish","type":"post","link":"https:\/\/www.bates.edu\/news\/2017\/12\/14\/students-in-biology-class-visit-lewiston-brewery\/","title":{"rendered":"Don&#8217;t taste the hops: Bates students take a Lewiston brewery tour"},"content":{"rendered":"<p>On Dec. 7, Andrew Sheffield, director of brewing at Baxter Brewing Co. in Lewiston, told a group of Bates students how beer is made.<\/p>\n<p>As he spoke, the processes he described went on around them. The smells of fermenting barley and hops wafted through the brewery. Forklifts and other machinery roared in the background. (Phyllis Graber Jensen\/Bates College)<\/p><\/div>\n<p><span style=\"font-weight: 400;\">\u201cWe discussed the production of beverages that intoxicate, what plants are used to make those beverages, and the history behind it,\u201d said Assistant Professor of Biology Brett Huggett, who taught the course.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cWe learned about hops and the cultivation and processing of barley,&#8221; one of the first crops domesticated in the Fertile Crescent of the Middle East. The class also discussed human uses of fungi, including yeast. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">&#8220;The brewery tour seemed like a great end to the semester, a way to tie a lot of the course components together.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">At Baxter, they got to see those processes in action. The class took the tour in two groups, each starting in Baxter\u2019s bar, where taproom manager Andrew Bielecki explained the history of the Bates Mill complex in which the brewery is located, the history of Baxter Brewing itself, and the craft beer market in Maine and New England.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Sheffield then told the Bates groups about the science behind brewing \u2014 how barley is malted, mixed with hops, and fermented with yeast to create beers of innumerable flavors and colors.
