At the reception following their July 31 wedding outside Madison, Wis., Keith Hengen \u201906 and Catherine Pautsch changed the recipe just a bit, eschewing a wedding cake and instead serving nearly three dozen pies to their guests.<\/p>\n

The couple has nothing against wedding cakes \u2014 except that they\u2019re \u201cgenerally overpriced, impersonal, and a bit more like cardboard than they ought to be,\u201d Keith says.<\/p>\n

So, after \u201cnot very much deliberation,\u201d the couple realized that Keith\u2019s family has a number of
\nskilled piemakers. \u201cCate and I ran the idea past them \u2014 \u2018Would you mind making 20 pies?\u2019 \u2014 and
\nthey were keen.\u201d Friends also volunteered, resulting in 35 pies of all varieties, plus ice cream from the University of Wisconsin\u2019s agricultural school.<\/p>\n

The pie reserved for the bride and groom was a Maine blueberry pie made by Keith\u2019s mother. Otherwise, it was a free-for-all. \u201cI watched \u2018respectable\u2019 friends spooning samples of five or six pies into their mouths as they passed the tables,\u201d Keith chuckles.<\/p>\n

Keith is pursuing a doctorate in neuroscience at the University of Wisconsin, while Cate works
