More vegetarian protein variety!!

I wanted to share some feedback regarding vegetarian protein options in the dining hall. Tofu-based dishes are consistently popular and well-received, but many vegetarian students—including myself—find that seitan and tempeh options are often less appealing and tend to go uneaten.

It would be great to see a wider variety of tofu dishes, as well as more familiar and approachable vegetarian or vegan protein options, such as vegan chicken alternatives. Dishes like a vegan chicken parmesan or veggie nuggets are always great, but very infrequent.

Expanding these options would make it easier for vegetarian students to find satisfying, protein-rich meals while also offering choices that many students already enjoy. Thank you for considering this feedback and for the work you do to support diverse dietary needs on campus.

Many thanks for your napkin. There are many vegaterian options available in Commons beyond tofu. These options include eggs, beans, legumes, yogurt, nut butters, seeds, and cheese to mention a few

We also rotate popular meat alternatives regularly, including vegan nuggets, Malibu burgers, Impossible meat, Beyond Burgers , Vegan Chicken Parm (served every time Chicken Parm is on the menu), black bean cakes, potato lentel patties………….

Pleaser feel free to reach out to me directly if you would like to chat about options

Best

Michael
